<description>Italian cuisine has a great variety of different ingredients which are commonly used, ranging from fruits, vegetables, saucesIn central Italy (including Emilia-Romagna), common ingredients include ham (Parma ham), sausage (Zampone), different sorts of salami, truffles, lasagna, grana, parmigiano reggiano), tomatoes (Bolognese sauce or ragu), and tortellini are important elements. Finally, in Southern Italy, tomatoes (either used fresh or cooked into tomato sauce), peppers, olives and olive oil, garlic, artichokes, oranges, ricotta cheese, aubergines, courgettes, certain types of fish (anchovies, sardines and tuna), and capers are important components to the local cuisine.
Italian cuisine is also well known (and well regarded) for its use of a diverse variety of pasta. Pasta include noodles in various lengths, widths and shapes, and varieties that are filled with other ingredients like ravioli and tortellini. The word pasta is also used to refer to dishes in which pasta products are a primary ingredient. It is usually served with sauce. There are hundreds of different shapes of pasta with at least locally recognized names.Examples include spaghetti (thin rods), macaroni (tubes or cylinders), fusilli (swirls), and lasagne (sheets). Two other noodles, gnocchi,  are sometimes considered pasta. They are traditional in parts of Italy.

<description>The food of Calabria, despite the abundance of fresh fish, is primarily a diet of simple fresh pastas, homegrown vegetables cooked in a myriad of ways, and meats, particularly pork. Although pasta is important to all Italians, in Calabria it is treated with an almost reverence. Each city or town has it's own pasta specialties, from chewy fusilli, to various types of lasagne. Calabrians seem to know by instinct, the best sauce to pair with each pasta to create the most delicious dishes. Sauces include many seafood and meats, as well as various vegetables, with tomatoes playing an important role. One rich, baked lasagne, consists of layers of delicate egg noodles blanketing a spicy tomato sauce. Spaghetti alle Vongole, the "white" version of pasta with clams, is also a popular dish commonly found in Calabria. Orecchiette con Cima, a simple pasta made with broccoli rabe, is typical of Calabrian cooking, using just tasty, saut&amp;#233;ed greens mixed with pasta.

 Deriving from the French "Anduille" the n'dujia is a type of cured salami, made from genuine pork and flavoured with ground hot chilli pepper. It has it's roots in ancient Greek and Roman kitchens, but it was also enjoyed by the Normans, Spanish and French. N'dujia is a typical Calabrian product.

<title>Summer Recipie Mediterranean Pasta Salad</title>

Cooking time 10 to 30 mins

    
Ingredients
340g/12oz pasta shapes, cooked and drained
2-3 red onions, peeled and cut into wedges
3 courgettes, cut half lengthways
1 large aubergine, cut into thick slices
1 red and 1 yellow pepper, de-seeded and cut into quarters
olive oil
sea salt and cracked black pepper
To serve:
extra virgin olive oil, chilli oil and balsamic vinegar or pesto
parmesan or mozzarella
torn basil leaves
Method
1. Preheat the barbecue or grill to a medium heat.
2. Toss the vegetables in olive oil and season with salt and pepper.
3. Barbecue the peppers first. Cook skin side down until the skin becomes charred. Remove, peel off the skin, cut into strips and set aside.
4. Barbecue the remaining vegetables until soft and crisping at the edges. Remove and cut the aubergine and courgettes into chunks.
5. Stir the vegetables through the cooked pasta. Pour over extra virgin olive oil, chilli oil, balsamic vinegar or pesto.
Serve topped with parmesan or mozzarella and torn basil.
