Ingredients
350ml Espresso or strong Italian Coffee 150ml Baileys cream liqueur 400g packet Savoiardi biscuits 2 Eggs 750g Caster Sugar 500g Mascarpone Cheese 3 Teaspoons Cocoa Powder
Mix the Coffee and Liqueur in a shallow bowl.
Dip the biscuits into the liquid quickly, just to wet them on each side, dont let the liquid soak through. Place them on the bottom of a 12 inch square dish.
Separate the eggs, keep one of the whites. Whisk the 2 yolks and castar sugar together until thick. Fold in the mascarpone.
Whisk the egg white until frothy and fold into the mascarpone mixture. Spread half of this on top of the biscuits.
Cover with another layer of soaked biscuits and top with the remaining mascarpone.
Cover and leave in the fridge overnight if possible.
Before serving, sift the cocoa powder through a sieve and dust the top of the tiramisu.
