Mafalde 500g

 A flat wide ribbon pasta, somewhat similar to a narrow lasagne riccia with a wavy edge, that is approximately ½ to ¾ inch in width and has rippled edges on both sides. This pasta is found both in short lengths of about 1 ¼ inches (mafalde corta) and long lengths of 10 inches or more.

Used in a similar way to tagliatelle with a good ragu or oily sauce. The ripple edges and rough surface ensure the sauce sticks to the pasta.
