Ditalini rigati are small, ridged pasta tubes used in soups to give body, and are often used for children as the bite sized pieces are easily managed by tinny mouths. Cut with bronze plates to create a rough surface to allow the sauce to stick, and top grade durum wheat to give that authentic Italian texture and flavour.
