Hailing from Rome this past is a wider version of tagliatelle. Made from traditional Durum wheat drawn through bronze dies giving the pasta a rough surface ensuring the sauce sticks to it. This gives the pasta more surface area, so its great for more creamy sauces, as the pasta holds the sauce very well. But its also good with a good ragu made from scratch.
