Candele pasta the word derives from the Italian word for candle. It is evident to see why, these long tubes if pasta look similar to a candle. Originally from the south of Italy this shape spread through Naples.

This pasta is often broken up and added to dishes, or is very good for baked dishes as the sauce fills up the tubes and cooks from the inside to give an even cooking, similar to a cannelloni.
